Apple & Pear Crumble

High in fibre from the oats, flaxseed and fruit, this crumble is an easy way to support gut health while still feeling like a proper winter treat.

Reheats well and makes the whole house smell delicious.

Fruit base

  • 800g pear and apple, chopped

  • Cinnamon, to taste

  • Nutmeg, to taste

Topping

  • 120g oats

  • 55g cashews, roughly chopped

  • 40g brazil nuts, roughly chopped

  • 70g brown flaxseed meal

  • 30g butter, melted

  • 1 flat tbsp brown sugar

Method

  1. Preheat oven to 160°C. Place pear and apple into a baking dish and sprinkle with cinnamon and nutmeg.

  2. Fill the baking pan about one-third full with water (around the fruit, not over it), then cover tightly with tin foil.

  3. Bake at 160°C, covered, for 25 minutes.

  4. While the fruit bakes, mix oats, cashews, brazil nuts and flaxseed meal in a bowl. Stir through the melted butter and brown sugar until well combined.

  5. Remove the foil, scatter the oat topping evenly over the fruit, and return to the oven uncovered for 15 minutes, until golden.

Serve with good quality Greek yoghurt, I love chopped kiwi fruit on top.
